When I'm using the Workout app on my Apple Watch Series 3, the workouts always end themselves far before I've finished working out. I'm also using the FitBod Apple Watch at the same time. Am I missing some setting to keep the workout tracking going until I end it?

This definitely clears up what "open goal" means. Thank you. After looking back at my past workouts, however, they were all set to "open goal" so I'm thinking it's the two apps (fitbod and workouts) not playing nicely.
Have you set a timed goal for your workout? That could be why it is ending.
Try setting an open goal workout.
Choose the workout you want to do and tap the " ... "
then tap open goal
I tested having an open goal set while working out, but Workout still closed while it was in the background.
