Since I installed the new Catalina OPerating System I no longer see a way to eject my iPod from my MAC after adding music to it from my iTunes library. Am I miussing somethning?

Have you tried ejecting it from within Finder?
Many of the function which used to be done in iTune have now be moved to Finder, which is where they beloved all a long.
