maximum or high, what's the difference?
Do you mean Movie recording rather than Screen recording?
In my case, if I capture the video from an external camera I get full HD video only selecting maximum. High gives my less defined image (720, I guess).

I did mean movie recording with an external camera. This is an awesome answer. I don’t know why these things wouldn’t be on the QuickTime guidebook.
