New phone - Apple watch not updated prior to switch

Hello everyone - I've had a Nike Apple (Series 2) watch for awhile now - it needed a software update and it never got done before I went and upgraded my 6S Plus to a XR. Now since my watch isn't on the most updated software I cannot pair the watch with the phone.


My closest Apple store is 3 hours away. I hope someone can help me! I went into Verizon and they were ZERO help at all.
