I am currently a member of family sharing and I have only just realised that the organiser has been paying for all my purchases. If he ‘stops sharing purchases’ on the family sharing settings, can I update my own payment card and still be a member of family sharing so I have access to Apple Music?

Probably not. The organizer is responsible for all charges. You can buy/redeem App Store/iTunes Gift cards to your account. Charges will normally be taken from your account balance before the organizer is charged.
